If you have ever traveled to the country of Taiwan, then you should know exactly what this sauce is.
After all, you can’t go a few days in this country without encountering this amazingly thick, red-tinged sauce.
It is a favorite among many locals and tourists alike for its strong flavors that enhance any food you pair it with.
I first encountered this sauce when I was roaming around the night markets in Taiwan. I found a shop selling this tasty food called a “Bawan”, and I had to try it out.
And immediately after taking a bite, I noticed how delicious this sauce tasted. It was sweet and sour but yet not too overpowering.
But that’s not all.
In fact, while roaming around the night market some more, I noticed more and more shops are adding this sauce to their foods. From things like fried rice to oyster omelets or even chicken nuggets.
This thing was everywhere!
And I wanted to learn how to make it! Fortunately for me, I have family here in this country who actually does know how to make it. So I asked them for some tips and recipes, and that is exactly what I am going to be sharing with you all today.

Hai Shan Sauce / 海山醬 is a very popular Taiwanese sauce that is used with a variety of different foods.
The sauce basically revolves around the use of ketchup being combined with some other sauces and seasonings to make something even better than ever.
When tasting the sauce, you’ll notice that it is slightly sweet and also sour with a very nice tomato flavor.
The sauce isn’t overpowering when used and actually helps elevate any and all foods you pair it up with.
What Can It Be Paired With?
Hai Shan Sauce / 海山醬 is literally just a Taiwanese version of a sweet and sour sauce.
Which means it is perfectly fine to be used with almost anything you want.
For instance, it’ll go perfectly well with meat type dishes like beef or chicken or even seafood if you want.
There really are no rules.
This sauce when paired with any type of food will give it a more sweet and sour type of taste that will elevate the flavors to the next level.

Ingredients To Make Hai Shan Sauce
The ingredients to make Hai Shan Sauce / 海山醬 are all easily available to find at any local supermarket you go to.
Basically, the ingredients you’ll need to make this sauce includes:
- Ketchup – 1/4 Cup
- Rice Vinegar – 1/4 Cup
- Sugar = 1 Tablespoon
- Soy Sauce – 1 Teaspoon
- Cornstarch – 1 Teaspoon
- Cold Water 1/2 Cup
- Salt – Just a pinch
And that’s basically it!
It’s a very simple sauce to make that uses very minimal ingredients.
How To Make Hai Shan Sauce
Making Hai Shan Sauce / 海山醬, is a very simple thing to do.
It’ll only take a few minutes from start to finish and you’ll be able to enjoy it with all your favorite foods.
The process to make this sauce consists of:
First grab a small saucepan over medium-high heat and add in your ketchup, vinegar, sugar and soy sauce. Stir it around so that you can combine everything together.
Cook the mixture for a few seconds, stirring until the sugar dissolves and the mixture starts to bubble.
While your mixture is cooking, in a separate bowl, whisk together the cornstarch and water.
Pour the cornstarch mixture into the ketchup mixture in the saucepan. Then continue to stir things around until the sauce has slightly thickened. This should take about 1 minute.
Add some salt to taste.
After that, remove the saucepan from the heat and turn off the stove. Let the sauce cool completely before you serve it.
How To Store/Keep For Later Use
Storing the Hai Shan Sauce / 海山醬 is a very simple thing to do.
Basically once you are done making it, you should pour it into a jar with a lid or an air tight container. Then just put it in the fridge and it should stay well for at least 4 to 5 days.
Then whenever you are ready to use it again, simply take it out of the fridge and stir the sauce around for a bit. It should be ready to use as is, or if you want, you can also heat up this sauce again by putting it back on the stove over medium heat and stirring it around for a minute or so until its ready.
As for freezing, you’ll be happy to know that this sauce freezes very well. Simply put it into an air-tight container and pop it into the freezer. It should keep well for up to 3 months.
Hai Shan Sauce Recipe (海山醬)
- 1/4 Cup Ketchup
- 1/4 Cup Rice Vinegar
- 1 Tablespoon Sugar
- 1 Teaspoon Soy Sauce
- 1 Teaspoon Cornstarch
- 1/2 Cup Cold Water
- Salt Just a pinch
- Heat up a small saucepan over medium heat and add in the ketchup, vinegar, sugar and soy sauce. Make sure to stir everything around to combine it.
- Continue to stir things around until the sugar dissolves and the mixture is starting to bubble.
- While the mixture is cooking, grab a separate bowl and whisk together your cornstarch and water.
- Pour the cornstarch mixture into the saucepan and continue to stir things around until it has slightly thickened. This should take about 1 minute.
- Add a pinch of salt to taste
- Turn off the heat and remove the saucepan from the stove to cool down.
- Once the sauce has completely cooled down, it is ready to serve.
