But the most popular sandwich you can find in Japan is definitely the Egg Sandwich or as some may call it “Egg Salad Sandwich”.
This sandwich can be found in many different stores and vendors all across the country. Especially in those convenient stores where they are so insanely cheap to buy and makes for a perfect lunch or dinner item to have.
And in this post, you’ll be able to learn how to make it in the most authentic and simplest way possible. The sandwich is so full of flavor and will instantly become one of your most favorite things to make ever.

What Is A Japanese Egg Sandwich?
If you ever been to Asia and have walked in any of the convenience stores, chances are you’ll probably come across a sandwich that is filled with egg.
This sandwich is called a Japanese Egg Sandwich or Tamago Sando (卵サンド) in Japanese. Basically it means “Tamago” which is egg and “Sando” which is sandwich. Combine that together, and you get Egg Sandwich!
Now as you know, Egg Sandwiches are a Western made food item. However the Japanese have taken this food item and elevated it into something more, something better, something that everybody wants.
Japanese Egg Sandwich basically consists of 2 pieces of white bread (usually Japanese Milk Bread), smashed hard boiled eggs, Japanese Mayonnaise (Kewpie), as well as some seasonings.
Now there are many different variations you could use to create this sandwich, in this post however we will be showing you how to make it in the most simplest way possible.
Difference Between Japanese And Western Egg Sandwich
Upon first looking at a Japanese Egg Sandwich, you might be thinking….this is basically the same thing as the Western version.
However if you were to inspect it further, you will find out that there is actually a difference.
In the Western version, egg sandwiches are usually not about the egg. For example, inside the sandwich, you might find smashed hard boiled eggs mixed with other ingredients like onions, celery and more. Plus, it’ll be paired with a random type of bread just to hold things together.
But in the Japanese version, the egg sandwich is literally all about the egg. In fact, the main ingredients for making this sandwich is hard boiled eggs, Japanese Mayonnaise, and some seasonings. Then it is smashed together between Japanese Milk Bread. The end result brings out a very eggy flavor that everybody seems to love.
Ingredients In Japanese Egg Sandwich
The ingredients you’ll need to make this Japanese Egg Sandwich / Tamago Sando / 卵サンド is as followed:
- White Bread – 4 Pieces of Bread (If you can, use Japanese Milk Bread. But if you can’t find that, regular white bread will work just fine.)
- Hard Boiled Eggs – 4 Large Hard Boiled Eggs
- Kewpie Mayonnaise – 2 Tablespoons
- Sugar – 1/2 Teaspoon
- Salt – 1/4 Teaspoon
- Milk – 1/2 Tablespoon
- Black Pepper – 1/2 Teaspoon
And that’s basically it!
How To Make Japanese Egg Sandwich
The process to make Japanese Egg Sandwich / Tamago Sando / 卵サンド is a really simple thing to do.
In order to make this sandwich, you will need to do the following:
Making Your Hard Boil Eggs
Place 4 eggs into a pot and fill it with just enough water where it is just above the eggs.
Cook the eggs over medium-high heat and wait till it starts boiling. Once the water starts boiling, let the eggs cook uncovered for about 10 minutes.
After 10 minutes is up, turn off the heat and transfer the eggs to a bowl with ice water. This will help prevent the eggs from over cooking.
Once the eggs are cool to the touch, you can start peeling the eggs to remove the shell. Then it is ready to use.
Making Your Egg Sandwich
Once your eggs are ready, its time to make your sandwich.
Place 3 hard boiled eggs into a bowl.
Then use a masher and mash the eggs up into tiny pieces.
After your eggs are mashed, season it with some salt, sugar and black pepper. Then add in your Kewpie mayonnaise and milk. Mix the contents together until everything is incorporated together.
This is basically your egg salad and is now ready to be used in the sandwich.
Place 4 pieces of bread onto a cutting board or plate. Then scoop out half of the egg mixture and place it onto one piece of bread. Make sure to spread it all over the bread so that the egg covers the entire slice of bread.
Repeat with the other half of the egg mixture and place it on the other piece of bread.
Then take your remaining two pieces of bread and place it on top of the egg salad bread.
And that is basically it! You have just made Japanese Egg Sandwiches.
Serve immediately.
Optional Styling
If you want to make your sandwich a lot fancier, you can do that as well.
With the last remaining hard boil egg, you’ll want to use a knife and cut it in half.
Grab a piece of bread and place the 2 halves of the egg onto the middle section of the bread.
Then you can cover the eggs with some egg salad and then cover it up with another piece of bread.
This method will give your sandwich a more eggier appearance.
How To Store/Keep For Future Use
Storing this Japanese Egg Sandwich / Tamago Sando / 卵サンド for future use is actually a pretty simple thing to do.
All you have to do is simply wrap the sandwich up in some plastic wrap or put it in an air-tight container and place it in the fridge. It should remain good for up to 3 days.
I would not suggest you to freeze this sandwich because it does contain mayonnaise, which doesn’t do well in freezing.
When you are ready to eat this sandwich, you can simply take it out of the fridge and warm it up a little bit or you can eat it cold. Either way works.
Japanese Egg Sandwich Recipe (Tamago Sando 卵サンド)
Ingredients
- 4 Slices White Bread If you can, try to get Japanese Milk Bread
- 4 Large Eggs Hard-Boiled
- 2 Tablespoon Kewpie Mayonnaise
- 1/2 Teaspoon Sugar
- 1/4 Teaspoon Salt
- 1/2 Tablespoon Milk
- 1/2 Teaspoon Black Pepper
Instructions
Prepping The Eggs
- Place 4 eggs into a pot and fill it with just enough water to cover the eggs.
- Place the pot on the stove over medium-high heat. Once the water is boiling, let the eggs cook for 10 minutes uncovered.
- After 10 minutes, turn off the heat and transfer the eggs into a bowl with ice water.
- Once the eggs are cool to touch, peel the eggs and set aside.They are now ready to use
Making The Sandwich
- Place 3 eggs into a bowl. Then use a masher to mash the eggs up into tiny pieces.
- Season the egg contents with some salt, black pepper and sugar. Then add in the Kewpie Mayonnaise and milk. Mix things around until everything is incorporated together.This is basically your egg salad mixture.
- Grab 4 slices of bread and place them on a cutting board or plate.
- Scoop up half of the egg mixture and spread it all over 1 slice of bread.Repeat this step with the other slide of bread as well.
- Then take the remaining 2 slices of bread and cover the sandwich together.You have just made 2 Japanese Egg Sandwiches.
- Serve Immediately.
