One of my families most favorite vegetable dishes to have at all times is something called a Stir Fry Snow Pea Leaves With Garlic / 炒豆苗 dish.
The reason for this is because it is incredibly simple to cook and takes literally 5 minutes to make.
It is a dish that can be made any time of the year especially during times when you are in a rush and need something made fast.
I remember every time my parents are making this dish, I would always ask my parents to add more garlic. The more garlic the better because I absolutely loved garlic. Although they never did so because too much garlic would be bad and overpower the dish.
But it’s okay, I have since learned the error of my ways.
So now I enjoy this dish as is because I have since come to terms with this dish and have grown to love it for the way it is made.

What Is Snow Pea Leaves?
Snow Pea Leaves are a very interesting ingredient that can be commonly found all over Asia. Depending on where you visit, they may also be known as snow pea tips or even Chinese Pea Shoots.
These delicious leaves are grown from the stalks of the plant when the pods are near completion. Both the leaves and the stem are actually edible and taste really nice especially when cooked.
Once cooked, these leaves tend to become extremely soft and tender that is similar to that of spinach. Also the stems tend to have a slight crisp to it which makes the entire experience so much more enjoyable.
They are also highly nutritious as they contain many important vitamins and minerals that the body needs.
For instance, some of the nutrition from these leaves includes:
- Vitamic C
- Vitamin E
- Vitamin A
- And lots more!
As you can see, snow pea leaves are pact full of nutritional value. For instance, they have 6 times more Vitamin C than blueberries, 8 times more folic acid than bean sprouts, and even 4 times more Vitamin A than tomatoes.

How To Pick And Prep Snow Pea Leaves?

When going to the store to buy these delicious snow pea leaves, it may be a bit of a hassle to pick things out.
Depending on where you go, they may either be sold in bags or they may be sold by the pound on a table where they are all spread out for you to pick.
Either way, the best way to select the freshest snow pea leaves is to simply look for ones that don’t have any budding flower or curly tendrils attached to it. Also, you’ll want to look for leaves that are vibrantly green in color and avoid those that are brown or mushy as they tend to be older and not as fresh.
Prepping Snow Pea Leaves
Once you buy the snow pea leaves, you’ll have to prep it for a bit before you can use it to cook.
And by prepping, we typically mean giving them a nice and clean wash.
The reason for this is because unlike Western markets, Asian supermarkets don’t really clean their fruits and vegetables before hand. Which often means there will be dust or dirt on the food.
Which is why giving them a clean wash will do wonders.
Simply run some water through the entire batch of leaves and using your hands, make sure each and every leaf is clean. You want to do this for about 5 minutes or so until everything is clean.
Then just pat the leaves dry with a napkin and you are able to use them in your cooking.
Ingredients To Make Snow Pea Leaves With Garlic
The ingredients you’ll need to make Stir Fry Snow Pea Leaves With Garlic / 炒豆苗 includes:
- Snow Pea Leaves – 1 Pound of leaves
- Garlic – 4 cloves finely chopped
- Ginger – 2 to 3 thing slices chopped into tiny strips
- Ground White Pepper – 1/2 Teaspoon
- Salt – 1/4 Teaspoon
- Sesame Oil – 1 Teaspoon

How To Make Snow Pea Leaves With Garlic
Making Stir Fry Snow Pea Leaves With Garlic / 炒豆苗 is actually a really simple thing to do.
To make this dish, you’ll have to do the following:
First, if you haven’t already, you’ll want to clean the snow pea leaves and rinse them through water.
After that, then grab a napkin and pat them dry.
Grab a large wok or pan and pour some oil into it over medium-high heat.
Once the oil is hot enough, you’ll want to add in your garlic first. Cook the garlic around for a few seconds or so until things get fragrant.
Then toss in your ginger and stir things around for a few more seconds.
Then toss in your entire batch of snow pea leaves. Using a spatula, you’ll want to constantly stir things around until the snow pea leaves start to shrink and become soft and tender.
During this stage, you’ll want to add in your ground white pepper and salt.
Then lastly you’ll want to add in your sesame oil on top of the leaves.
Continue to stir things around for a bit and then place a lid on top of your wok or pan to cover it.
Let it cover for about 1 to 2 minutes. Then uncover the lid and stir for a few more seconds. After that, turn off the heat and transfer the contents onto a plate.
How To Store/Keep This Dish For Future Use
If you want to store this Stir Fry Snow Pea Leaves With Garlic / 炒豆苗 dish for future use, then it is a simple thing to do.
Basically, all you’ll need to do is to simply take the dish and wrap it up in some plastic wrap or put it in an air-tight container. After that, simply place it in the fridge where it should remain good for up to 3 days.
If you are wanting to re-heat this dish and to make it just like new, all you’ll have to do is simply add some oil into a wok or pan over medium-high heat. Then add the contents inside and stir it around for a minute or so. Once it’s hot, then it is ready to serve.
Stir Fry Snow Pea Leaves With Garlic Recipe (炒豆苗)
- 1 Pound Snow Pea Leaves
- 4 Cloves Garlic Finely Chopped
- 2 to 3 Slices Ginger Finely Chopped
- 1/2 Teaspoon Ground White Pepper
- 1/4 Teaspoon Salt
- 1 Teaspoon Sesame Oil
Prepping Your Ingredients
- Finely chop your garlic into tiny pieces and set it aside.
- Finely chop your ginger into tiny pieces and set it aside.
- Wash and clean your snow pea leaves through some water. After that, pat it dry with some napkins.
Cooking The Dish
- Grab a large wok or pan and pour some oil into it over medium-high heat.
- Once the oil is hot enough, you'll add in your garlic and cook it around for a few seconds.
- Then toss in your ginger and stir things around until things become fragrant. This should only take a few seconds.
- After that, immediately toss in your entire batch of snow pea leaves. Then using a spatula stir things around until the snow pea leaves start to become soft and tender.
- During this stage, you'll want to add in the salt, ground white pepper and sesame oil. Continue to stir things around for a minute.
- Place a lid on top of the wok or pan and let it cover for a minute or two.
- Once time is up, uncover the lid and stir the contents around for a few seconds. Turn off the heat and transfer the contents onto a plate.
- Serve immediately.
