Taiwanese Cold Noodles With Sesame Sauce or (Liang Mian 台式涼麵), is a savory cold noodle dish from Taiwan that is enjoyed all throughout the year. It’s typically served cold or at room temperature, and consists of noodles, cucumbers, carrots, eggs, and that delicious sesame sauce. It’s a dish that is simple to make and packs a whole lot of flavor.

If you ever been to the country of Taiwan, you’ll know that the weather there is incredibly hot and humid.
Which is why, one of the best foods to eat is something called a Taiwanese Cold Noodles With Sesame Sauce.
This dish can be found in almost every restaurant in the country as well as being sold by many vendors in the street markets. It is a comforting dish that is usually served cold or at room-temperature which helps eaters beat out that hot summer heat.
It is also one of my most favorite things to eat because of how simple it is to make as well as being incredibly delicious.
I remember when I was younger that I would always ask my mom to make me this dish whenever it was incredibly hot outside. And in less than 15 minutes, she would assemble the entire dish and have it ready for me to eat.
It’s something very near and dear to my heart.
Which is why I wanted to write about it today in this post.

Well, in all honesty there are many varieties of this dish depending on where in Asia you decide to visit. However the Taiwanese version is one that is incredibly simple and provides a whole lot of flavor and taste.
The Taiwanese version of this dish is basically a cold noodle dish that is garnished with some vegetables, eggs, and covered with a really tasty sesame sauce.
It’s a dish that is commonly enjoyed all throughout the year but especially during the hot summer months.
Sesame Or Peanut Butter?
Depending on where you go, some vendors may use sesame paste while others will use peanut butter. Heck, there are some that even combines both of these together to make a special sauce.
However it is my opinion that sesame paste by itself is perfect enough for this dish. Mainly because the addition of peanut butter will make the texture too thick as well as making the taste feel kind of different.
Using sesame paste by itself will provide a world of flavor and is typically the favored method by most Taiwanese people who makes this dish.

Ingredients Used To Make Taiwanese Cold Noodles With Sesame Sauce
The ingredients needed to make Taiwanese Cold Noodles With Sesame Sauce / Liang Mian / 台式涼麵 is as followed:
Noodles
- Chinese Noodles – 2 Servings (follow back of noodle package for details)

Side Items
- Eggs – 2 Eggs cooked into an omelets and sliced into thin strips.
- Cucumber – 1 Medium Cucumber sliced into thin julienned strips.
- Carrots – 2 to 3 Medium Carrots sliced into thin julienned strips.

Sesame Sauce And Other Ingredients
- Sesame Paste – 2 Tablespoon Sesame Paste
- Sugar – 1 Tablespoon Sugar
- Vinegar – 2 Tablespoon Vinegar
- Mature Vinegar – 2 Tablespoon Mature Vinegar
- Soy Sauce – 1 Tablespoon Soy Sauce
- Sesame Oil – 1 Teaspoon Sesame Oil
- Salt – Pinch of Salt
- Water – Varies up to 1 Cup
Extra Item
- Vegetable Oil – 1 to 2 Tablespoon

How To Make Taiwanese Cold Noodles With Sesame Sauce
Making this Taiwanese Cold Noodles With Sesame Sauce / Liang Mian / 台式涼麵 dish is an incredibly simple thing to do.
The process to make this dish is as followed:
Prepping The Noodles
First you’ll want to prep the noodles.
So fill a pot with some water and bring it to a boil.
Once the water is boiling, put your noodles in and cook them according to the packages instructions.

Once the noodles are cooked, take them out and place the noodles into a bowl.
Add about 1 to 2 tablespoons of vegetable oil into the noodles and mix it around. This will help the noodles not stick together.

Then set it aside.
Prepping The Side Items
First lets do the eggs.
Crack 2 eggs into a bowl and slightly beat the eggs together.
Then grab a skillet or pan and pour some vegetable oil into the pan over medium-high heat.
Once the oil is hot enough, pour your beaten eggs into the pan or skillet and make an omelet. Then cook your omelet until it is ready to use.
Let the omelet cool off a bit and then transfer it onto a cutting board. Now grab a knife and then slice the omelet into thin strips.

Then set the egg strips aside.
Now it’s time to prep the cucumber and carrots.
On the same cutting board, grab your cucumber and carrots and start slicing them into thin julienned strips.

Then after you have julienned your cucumber and carrots, set them aside.
Now it’s time to make your sesame sauce.
Prepping The Other Side Ingredients
This part might be confusing for some people, but once you try it once, you’ll realize it is really easy to do.
First thing you’ll want to do is prep your sugar water.
So in a small bowl, mix together 1 tablespoon of sugar with around 2 to 3 tablespoons of water. Mix things around until the sugar is dissolved and set it aside.

Now you’ll want to mix your vinegar together.
In a small bowl, add both the 2 tablespoons of vinegar with 2 tablespoons of mature vinegar. Then set it aside.

Now it’s time to make your garlic water mixture.
Grab around 5 to 6 garlic cloves and peel them. Then grab a mortar and pestle and smash the garlic into tiny pieces.

Now scoop out all of the mashed garlic pieces and place them into a bowl. Then add some water into the bowl and stir things around. This will be your garlic water mixture. Now set it aside.

Prepping The Sesame Sauce
Now that you have readied the garlic water, sugar water and vinegar mix, it’s time to make your sesame sauce.
Grab a bowl and put in 2 tablespoons of sesame paste.

This is where things might get confusing.
Pour some water into the sesame paste while mixing it around. The amount of water you put in will depend on how thick you want the sauce to be. My personal preference is to use about 3 to 4 tablespoons of water.

If you want this sauce to be thicker, then use less water. If you want it to be more liquid in consistency, then use more water.
After that, you’ll want to add in a pinch of salt to the sesame mixture.

Now add in your tablespoon of soy sauce.

Now add a few more tablespoons of water into the sesame mixture and mix things around.
My personal preference is around 2 to 3 tablespoons at this point. But if you want a more liquid sauce, then add a bit more water if you want.

Now it’s time to add the final ingredient, which is the sesame oil.
Add the 1 teaspoon of sesame oil and mix the mixture together.

Now you are all ready to assemble your Cold Noodles With Sesame Sauce.
Assembling Your Cold Noodles With Sesame Sauce
Steps:
1: Plate your noodles
2: Add 1 to 2 tablespoons of garlic water onto the noodles.
3: Add 1 to 2 tablespoons of vinegar mixture onto the noodles.
4: Add 1 to 2 tablespoons of sugar water onto the noodles.
5: Add half of the sesame sauce onto the noodles.
6: Add a bit of eggs, cucumber and carrots onto the plate.
7: Mix things around and enjoy.

How To Store/Keep For Future Use
If you are wanting to store this Taiwanese Cold Noodles With Sesame Sauce / Liang Mian / 台式涼麵 dish for future use, then know that it is pretty simple.
Any leftovers you might have, simply cover it up with some plastic wrap or put it in an air-tight container and store it in the fridge. They should remain good for up to 3 days.
However it is my personal recommendation to only make as much as you can eat. If you happen to have made too many ingredients, then do not worry. DO NOT combine everything together. Only combine what is needed, and any leftovers will be easy to store.
This way, you can store the carrots in their own container, the cucumbers in their own container, the eggs in their own container, and even the noodle and sauce in their own container.
As for re-heating, I would not suggest re-heating this dish as this dish is best served cold. So simply take it out of the fridge when you are ready to eat and add the necessary ingredients together. Then enjoy.

Ingredients
Noodles
- 8 Ounce Chinese Noodles
- 2 Tablespoon Vegetable Oil
Side Items
- 2 Eggs Cooked into an omelet and sliced into thin julienned strips.
- 1 Cucumber sliced into thin julienned strips.
- 2 Carrots sliced into thin julienned strips.
Sesame Sauce
- 2 Tablespoon Sesame Paste
- 1 Tablespoon Sugar
- 2 Tablespoon Vinegar
- 2 Tablespoon Mature Vinegar
- 1 Tablespoon Soy Sauce
- 1 Teaspoon Sesame Oil
- Salt Just A Pinch
- 5 Garlic Cloves Peeled
- 1 Cup Water
Instructions
Prepping The Noodles
- Fill a pot with water and bring it to a boil. Once the water is boiling, cook your noodles according to the packages instructions.
- Once the noodles are cooked, take them out and put them in a large bowl or pot. Then pour on top 2 tablespoons of vegetable oil. Mix it through with the noodles to help prevent sticking.Set it aside.
Prepping The Sides
- Crack your eggs into a bowl and lightly beat the eggs. Then grab a skillet or a pan and pour some oil into it over medium-high heat. Once the oil is hot enough, pour the beaten eggs into the skillet or a pan.Cook the eggs into an omelet and then turn off the heat.Transfer the omelet onto a cutting board and then start slicing the eggs into thin strips with a knife.Set it aside.
- On the same cutting board, grab your cucumber and carrots and start slicing them into thin julienned strips.Then set it aside.
Prepping Your Other Ingredients
- First you'll want to make the sugar water.In a small bowl, mix in 1 tablespoon of sugar with about 2 to 3 tablespoons of water. Mix things together until the sugar is completely dissolved. Then set it aside.
- Now you'll want to make your vinegar mixture.In a small bowl, combine both the white vinegar with the mature vinegar. Then set it aside.
- Now you'll want to make your garlic water mixture.Peel your garlics and then grab a pestle and mortar. Mash the garlic cloves into mashed pieces. Then scoop the mashed garlic out and transfer it into aa bowl. Add in about 2 to 3 tablespoons of water and mix it around with the garlic.Set it aside.
Prepping The Sesame Sauce
- Now it's time to make your sesame sauce.In a bowl, put in your 2 tablespoons of sesame paste.Pour about 3 to 4 tablespoons of water into the sesame paste and mix it around.Add your salt and mix it around with the sesame mixture.Add the tablespoon of soy sauce into the sesame mixture and mix it around.Add another 3 to 4 tablespoons of water into the sesame mixture and mix it around.Add in the sesame oil into the sesame mixture and mix it around.That is your sesame sauce.
Plating Your Cold Noodles With Sesame Sauce Dish
- Plate your noodles onto a plate.
- Add 1 to 2 tablespoons of garlic water onto the noodles.Add 1 to 2 tablespoons of sugar water onto the noodles.Add 1 to 2 tablespoons of vinegar mixture onto the noodles.
- Add half of the sesame sauce onto the noodles.
- Add your eggs, cucumber and carrot strips onto the plate.
- Mix things around and enjoy.
